The entire 14ha of vines across Brda, Slovenia and Collio, Italy, are managed strictly Biodynamically, though Kristian is not bothered about signing up for official Demeter certification. Grasses in-between rows have never been mown during the Keber’s ownership, preferring to maintain a grass permaculture to promote soil fertility and insect biodiversity, as well as aeration of the soil from the deeper roots of established grasses. 2 cows and 4 sheep are rotated 1ha at a time to manage the grasses and provide manure, with the animals taking shelter in the cooler forest close by in the warm summertime. Kristian’s new cellar is being build in Brda which will work entirely through gravity, also without requiring mains electricity or even water.
