Cantine Paolini was founded in 1964 by Gaspare Baiata and several like-minded, forward-looking growers. The average holding is 3 hectares, so – most unusually for a cooperative winery – everything is picked by hand. Clean, fresh and a mouth-filling white. Nice to drink on it's own but big enough to stand its ground with a roast chicken! Well made, easy drinking wines.
