A 2012 Caol Ila single malt from indie bottler Signatory Vintage, matured in a pair of hogsheads for nine years, before being bottled in November 2021 as part of its Un-Chillfiltered Collection. On the nose it displays bonfire ash and buttered oatcakes which leads into notes of root ginger and hints of drying seaweed on the palate. A warming finish of earthy spice and smoke.
