This is a sparkling celebration perry, made with the Ancestral Method (PetNat), and disgorged after 14 months on lees. The fruit comes from the first part of the harvest in September and early October, which gives a lighter, fresher perry rather than the late season fruit which tends to be sweeter and richer. The main varieties are White Longdon, Moorcroft, Taynton Squash, with others in smaller parts. Although this is a great, crowd pleasing sparkling perry it is not without complexity and interest, and there is a delicious herbal quality, slightly savoury, crushed nettles and florality. Drink as an aperitif, to celebrate or with oysters, light fish dishes, salads.
