In 2013, the search for vineyards begins, being clear that they met important requirements: unique terroirs that allowed it to produce elegant and fresh wines, but at the same time with personality and particular characteristics that would appeal mainly to their origin. In addition, an organic approach was applied in the management of the vineyard and the harvest was governed by the Biodynamic Calendar.
Vineyard is 18.5km from the coast, something that’s significantly reflected in the wine’s aromatic profile. The Vines are grown in shallow topsoil above weathered granite hillside. After hand harvesting the grapes the wine split into 70% fermented in stainless steel, 30% fermented in French oak, with 11 months on lees. This wine has an aging potential of at least 6 years.
This is a stunning Sauvignon Blanc, beautifully balanced with incredible minerality. A very unique Sauvignon Blanc indeed.
